Take for example Elena, who was given Damon’s blood without her knowledge to heal her head injury. She subsequently died later on, causing her to turn.

Stefan does become fearful of committing to Elena due to his hunger, but it’s not extreme. There’s not much risk involved in vampires being with humans, except when satiating their thirst and possibly going too far.
